PALERMO: Nice Pizza Nice Guests :o)

E very nice evening last night...Seline from USA works in the marketing business for a big company in France. Her brother manages a big restaurant...so....maybe we could have something more than just a pizza...well...I got the Pizza...Seline took a very good Pasta with eggplants (Pasta alla Norma) and her brother took a pizza...like me.Pasta alla Norma is a classic Sicilian pasta dish that everyone on the island grows up eating. (I haven't got a clue who Norma is, but I'm sure she's a good old girl!) I like this particular version because the aubergines are cut into strips rather than diced into cubes, and for some reason this seems to make them taste different. Also, adding oregano when frying the aubergines works so well. In Sicily the dish is finished off with salted ricotta - now, even though I can get hold of this easily in London, you might have some difficulty sourcing it, so feel free to use Parmesan or pecorino instead
I think it's interesting to manage a restaurant...I have always had the thought to open one....maybe someday ;o) How to organize the kitchen, the waiters....the customers?
Really interesting. We also talked about a lot of things and...of course about Mafia too...yep...it's funny how people are sointerested in the bad side of Sicily....soon maybe I'll write something more about Mafia...but now the Mafia is no more the Mafia od the Godfather. That Mafia existedad and had a "honor code". But the modern Mafia is very different...it'smore similar to the Mafia of the Godfather 3 but...the fantasy of Francis Ford Coppola and Mario Puzo was not big enough...
