PALERMO: Local Food around Palermo - La Muffoletta

Last night...with some guests, we went to the hill...one of the several hills next to Palermo. Near Monte Cuccio (in Bell'Occhio). Over there (in the middle of nowhere :o)) there is a nice rustic place....where you'll never find any tourist (except the Guests of Giorgio's House :o)
On this place you can only eat the food which is produced there... Local vegetables, local salamis, local sausices....well...today I want to talk you about the Muffoletta....which translates from Sicilian as "small mitten" Muffoletta means a bread, a salad and a sandwich. The bread originated hundreds of years ago in central Sicily. The olive salad also developed in the Mediterranean, and Sicilian immigrants brought them to New Orleans around 1900. The sandwich was developed in 1906 by a Sicilian immigrant in New Orleans.
Ingredients
* 1 loaf muffuletta bread or sesame topped Italian bread (round 10 inch loaf) .
* kosher salt, to taste, salt may not be necessary (optional) .
* 1/4 lb swiss cheese or emmenthaler cheese, thin sliced .
* 1 1/2 c extra virgin olive oil .
* 1/4 c roasted red peppers .
* olive salad (use 1 c for sandwich) .
* 1/2 c kalamata olives or black olives, pitted .
* 1/4 lb hard genoa salami, thin sliced .
* 3 tbsps red wine vinegar .
* 1 c pickled vegetables .
* 1/4 lb provolone cheese, thin sliced .
* 1/8 c celery, thinly sliced .
* 1 tbsp Italian parsley, finely sliced .
* 2 tsps dried oregano .
* 1 tsp crushed red pepper flakes .
* fresh ground pepper, to taste .
* 1 tbsp capers .
* 1/4 lb cappicola ham, thin sliced .
* 1/4 lb mortadella, thin sliced .
* fresh garlic cloves, thinly sliced .
* 1 1/2 c green olives, Pitted .
* 1 tbsp green onions, thinly slice
The Muffoletta I got was the traditional one with: Ricotta cheese, oil, salt and pepper...really simple but very taste and good!! ;o)
